stalling when changing gears on S3

when changing gear with the clutch pressed the engine revs fluctuate rapidly between 0-1000 rpm and sometimes the engine dies leaving me without power steering or control. does anyone have any ideas.

Coolant sensor is a possibility.

air leak quite possible - check all hoses
