anyone know what an N75 valve is on a TDI engine?

In Elsawin for a TDI engine, it is referred to as...
"boost pressure limitation solenoid valve -N75"
So I think you were right. Quite often the descriptions of things in the VW/Audi parts system do not match the descriptions in the Workshop manuals, from what I have seen. So it can be a bit confusing at times.

It's the valve that controls the VNT mechanism and therefore the boost pressure. It's 1 of the two on the bulkhead.
