Just fitted coil overs to my Car and I have rubbing as warned previously, I know I can higher the Car and leave it about 40mm to avoid any rubbing but is this the only solution?

Few options;
Raise it.
Stretch the tyres and camber.
Smaller wheels.
Pull and roll the arches and pop some spacers on if it inner.

Idiots rubbing on the driveshaft I think you can get a roll bar with bigger loops or if your coilovers have a tab on them you could use an s3/tt or cupra r roll bar then the drp link will attach to the coilovers if you have the tab.

but I'm sure someone with a lot more experience than me will come along and correct me lol

If the driveshaft is rubbing it'll be on the chassis. You'll need a notch to go lower. Arb won't help that.

The driveshaft will be rubbing on the ARB (anti roll bar). Use an ARB from any mk1 TT to solve the problem. You can pick them up for around £30 delivered from ebay
