As subject I have managed to remove the lower part of the seat, but I can't seem to remove the upper part with the head rests.
Any ideas?

Removing rear seats

If they're anything like the A4 then you just remove a clamp where the 2 seat backs hinge in the middle and they just lift out.

On each side where the seat backrest locates to the side of the car is a hook on a pivot.
Using a screwdrider, twist back the hook and then you'll be able to pull the seat out, if that makes any sense.
