My wife has just bought an A1 S-Line S-tronic but was surprised that when stopped in traffic the engine re-started when she put the gearbox into park and took her foot off the foot brake. We were expecting the engine to remain stopped. Is it normal for the engine to always restart when the gearbox is in park?

I think you will find that was just a mere coincidence with regards to the required pre-conditions for start-stop to be activated/remain in an engine stop condition
Usually, when in a stop condition and selected "P" and foot off the brake, the start-stop will remain off and deactivate, requiring you to turn the key again to start the engine as it assumes you will be getting out of the car.

So in a S-Tronic you need to keep your foot on the brake to use stop / start then or can you apply the hand brake?

So it has to stay in drive then, with hill hold added to the mix can you take your foot off the brake then?
